just to report, I made a passover variant (for easter sunday lunch, we're ecumenical we are!) and it's wonderful! substituted ground almonds for flour, no raising agent (heh, at Easter!), added an egg white to try and get bit more air in there. It's gooier by far, more of a pudding than a cake, and very very good chilled.
